Andrea Strocchio
Head Sommelier
Born in Lombardy and raised in Piedmont, one of Italy's most celebrated wine regions, Andrea developed a passion for wine and hospitality from an early age. After qualifying as a professional sommelier with AIS Italia, he built his career in Michelin-starred restaurants in Italy before moving to London in 2018.
Andrea spent four years at the three Michelin-starred Restaurant Gordon Ramsay before joining Pavyllon London as Assistant Head Sommelier in May 2023, ahead of the restaurant's opening. Promoted to Head Sommelier in 2024, he now oversees the restaurant's award-winning wine programme. Alongside his expertise in fine wine, Andrea has undertaken specialist training in sake, spirits and tea, reflecting his commitment to continual learning and a broad understanding of beverage pairing.
Andrea was recently ranked 25th in the prestigious Top 100 Sommeliers in the UK, an accolade that recognises the country's leading sommeliers for their knowledge, hospitality and contribution to the wine industry. Under his leadership, Pavyllon London's wine programme has continued to earn industry recognition, including Wine Spectator's Best of Award of Excellence 2026 and the AA's Notable Wine List Award in both 2025 and 2026.
Alongside leading the restaurant's wine programme, Andrea curates Pavyllon London's Wine Dinner Series, which sees bespoke tasting menus paired with exceptional wines, bringing guests together with some of the world's most celebrated producers. Previous collaborations have featured acclaimed names including Biondi-Santi and Champagne Palmer, with future events pencilled to showcase leading wineries from globally renowned wine regions.
What’s your favourite dish on the menu right now?
One of my favourites has to be our signature "Saint Ewe Soft Egg with Bluefin Tuna Tartare, ginger mayo and smoked pike roe". I'd pair it with a glass of Assyrtiko Akrathos 2022 from Newlands Winery in Halkidiki, Greece.
What’s your favourite thing about London?
I love how international London is. You can experience so many different cultures, cuisines and people all in one city, and there's always something new to discover. It never gets boring.
What’s your go-to recipe to make at home?
Saffron risotto. It's one of those dishes that takes a bit of time and care to prepare, but I really enjoy the process. It's simple, comforting and always reminds me of home.
What’s your dream vineyard to visit?
I've always been a big fan of Australian wines, so visiting the Hill of Grace vineyard in Eden Valley would be a dream. Henschke has such an incredible history, and I'd love to see the vineyard for myself and taste the wines where they're made.
